Caspian’s Cocktails & Caviar is now open at Caesars Palace offering a mix of rock ’n’ roll and opulence. The caviar bar and live music speakeasy by Clique Hospitality hosted an official grand opening celebration on Friday, Jan. 10, featuring a performance by rock legend and icon Sammy Hagar.
Caspian’s is indulgence with swagger, redefining nightlife with elegance and edge. Outside, the cozy caviar bar exudes understated luxury – without a hint to what lies behind the walls. Enter the rock lounge through a hidden door marked by a portrait, stepping into a vivid dreamscape infused with Parisian flair and high-voltage rock energy.
Live rock performances anchor the evening with a lineup of top talents curated by Ben Carey, from emerging artists to acclaimed touring musicians, in the live music speakeasy Tuesdays through Saturday nights.
Caspian’s craft cocktails complement Caspian’s curated menu of caviar, including the option to take any drink to the next level with caviar-stuffed olives. Signature cocktails include:
- Modern Glam, a blend of Monkey 47 Gin, ginger syrup, pomegranate juice and prosecco served with a pom-sugar rim
- “Fig”ure of Your Imagination, a mix of Maker’s Mark bourbon, Cointreau, fig jam, honey and lemon
- Feet in the Sand, Patron Silver tequila washed in coconut, Cointreau, banana liqueur, orgeat, lemon, lime, pineapple and bitters, with a toasted coconut sugar rim
The dining menu reimagines classic caviar pairings with a rock-star flair, featuring items including:
- Caspian’s Chips & Dip: Kaluga caviar paired with house-made French onion dip, chives and Pringles
- Mini Maine Lobster Rolls: Brioche buns filled with buttery lobster salad, topped with caviar and lemon
- Caviar Waffles: Crisp waffles topped with crème fraîche, chives and sturgeon caviar
Caspian’s also offers over-the-top pairings featuring chilled spirits from its curated collection of top-shelf champagnes and vodkas. Notable offerings include “The Full Boat,” 20 ounces of Imperial Golden Osetra caviar complemented by a bottle of Dom Perignon and “Caspian’s Royal Flight” – six vodka shots with a 1-ounce tin of Imperial Golden Osetra caviar.
We stopped by Caspian’s midafternoon Saturday on Dec. 21, the second day of opening in the former space of Cleopatra’s Barge. The bar is cozy and great for people-watching, and we enjoyed deviled eggs with caviar, potato latkes with caviar, Mini Maine Lobster Rolls with caviar and the cocktails “Fig”ure of Your Imagination, Feet in the Sand, Smoked Old Fashioned and Dirty Gin Martini.
Our server Arion was wonderful. The piece de resistance is the beautiful and spacious speakeasy – one friend said it reminded him of Nowhere Lounge at Fontainebleau Las Vegas, also a luxe nightlife spot. Caspian’s is a wonderful new addition to the Las Vegas Strip.
Crafted by Celano Design Group, Caspian’s design is an Art Deco masterpiece blending Parisian roots with golden accents, oversized couches and vibrant colors. The caviar bar delivers a cool European vibe with sleek onyx and pearl accents. Inside the live music speakeasy, a 16-foot ceiling is crowned with a chandelier, illuminating the space with sea-inspired hues and glimmering gold.
The caviar bar spans 1,100 square feet and seats 50, while the 2,300-square-foot live music speakeasy accommodates 100+. The caviar bar at Caspian’s is open 11 a.m. to 2 a.m. daily, with the kitchen closing at midnight. The live music speakeasy is open 8 p.m. to 2 a.m. Tuesdays through Thursdays and 6 p.m. to 2 a.m. Fridays and Saturdays.
