After 15 years of culinary service in Las Vegas, DW Bistro will close its doors after a farewell brunch on Sunday, April 6. Celebrated as the city’s first off-Strip brunch destination and lunch favorite, owner Bryce Krausman and founding Chef Dalton Wilson will host a series of farewell events in the coming months, with a finale brunch for last goodbyes.
“Undoubtedly, DW Bistro has left a mark on the Las Vegas local dining scene. We have had great culinary teammates that have spanned over a decade, and we are thrilled to share these final months with our longstanding loyal clientele and our remaining loyal staff,” Krausman said.
Opened in Southwest Las Vegas in 2009, DW Bistro quickly established itself as one of the city’s first off-Strip culinary destinations. Drawing inspiration from Wilson’s Jamaican and New Mexican heritage, the kitchen redefined local dining with bold flavors and updated brunch, lunch and dinner classics.
“I’ve been so proud to share my culinary heritage all these years in Las Vegas, the place I’ve called home since 1998,” Wilson added. “I’ve been lucky to be around award-winning chefs and to become one myself. DW Bistro allowed me to share my passion with my best friend Bryce, his family and for the last 15 years with our DW family.”
After many successful years of brunches, events and family gatherings, DW relocated to The Gramercy in 2016, building out a larger kitchen and dining room. A series of guest executive chefs allowed the brand to continue serving new flavors and techniques, while additional patio space offered room for weddings, gatherings and theme brunches.
“We’ve been thrilled to work with DW Bistro at The Gramercy,” said Jerry Yahr, managing principal, The Koll Co. “Although we are sad to see them go, we know they have left a long-lasting impression on the community, one we will count on, as we look forward to introducing a new fantastic partner to take the reins of this iconic space.”
On the heels of celebrating 15 years, Krausman and Wilson will fete the DW journey through a series of events, guest chefs and beloved throwback dishes that have traveled with them.
“We anticipate an excited rush of DW fans to roll in through April, and we are eager to connect with each of you as we near this end,” Krausman said. “But DW Bistro has been on a mission, one that will continue even when its doors at The Gramercy close. This is not the end. DW will continue to live within our hearts.”
