The former Donny & Marie Osmond theater at Flamingo Las Vegas has been home to “RuPaul’s Drag Race Live” since January 2020, and three new restaurants offer new reasons to grab a bite before or after the drag superstars have sashayed away.
Pinky’s by Vanderpump
New restaurant and cocktail bar Pinky’s by Vanderpump (coined after Lisa Vanderpump’s nickname “Pinky”) features playful and decadent dishes that complement Instagrammable cocktails and the restaurateur’s signature design aesthetic.
“Pinky’s has been a true labor of love, and we are excited to bring such an iconic resort on The Strip back to its glory days of old. Once again, Caesars Entertainment has trusted us to envision and create a truly unique experience,” Vanderpump said.
With a nod to The Flamingo’s vibrant history, the 198-seat restaurant and bar combines Art Deco glamour with lavish and decadent Vanderpump flair. Spanning nearly 7,000 square feet and set against a palette of muted greens, brass accents and soft blush pink hues, the space boasts a dramatic 32-seat bar.
Like Vanderpump’s other concepts at Caesars Palace and Paris Las Vegas, the design, lighting and fixtures are bespoke Vanderpump Alain creations designed for the space. The VIP lounge can seat as many as 40 guests.
Oversized booths are surrounded by brass Art Deco trellises. A vintage-inspired statue spins behind the center of the bar surrounded by gold chains and crystals. An oversized tree spans the glass ceiling of a conservatory looking out over The Strip.
The cocktail menu includes Pinky’s Martini, Flip the Bird, Pump & Bump and Daddy Issues. The menu includes Deviled Egg Gardens, Wagyu Sliders, Pinky’s Shrimp Cocktail, Signature Birdcages and Pinky’s Baked Alaska.
Pinky’s by Vanderpump at Flamingo Las Vegas is located along Las Vegas Boulevard next to The Cromwell. Hours: 3 to 11 p.m. Sundays through Thursdays and 3 p.m. to 2 a.m. Fridays and Saturdays. Brunch service is coming soon.

Havana 1957 and Cortadito Coffee House
Enjoy a Cuban American affair as Miami’s Havana 1957 and Cortadito Coffee House from Vida & Estilo Hospitality Group arrived at Flamingo Las Vegas on Dec. 28 offering Cuban food.
“We are thrilled to announce the opening of Havana 1957 and Cortadito Coffee House at Flamingo Las Vegas,” says Eduardo Araoz, co-founder and owner of VEHG. “With South Florida’s ‘Un Día en La Habana’ now complemented by Las Vegas’ ‘A Cuban American Affair’ campaign, we’re excited to bring the glamour, flavor and vibrancy of 1950s Havana to the heart of the Las Vegas Strip.”
Transporting guests to the glory of Havana in the glamourous 1950s, Havana 1957 is a celebration of Cuban classics, from breakfast bites to mojito nights. Offering breakfast, lunch, dinner and late-night fare, Havana 1957 celebrates the brand’s journey from Cuba to Miami – and now Las Vegas – along with cocktails and live entertainment.
Signature dishes include a classic Pollo Havana 1957, a Cuban family recipe of roasted chicken marinated in-house in a Cuban gravy; Croquetas with a choice of chicken and ham or cheese and cod; and a Cuban Burger, a tribute to the American burger done the Havana 1957 way – an 8 oz. ground beef patty topped with pulled pork, ham, Swiss cheese, pickles and mustard served in a sesame bun.
Exclusive to the Las Vegas outpost, early risers can enjoy Cuban Style Steak and Eggs with grilled shredded steak, two eggs and cheesy breakfast potatoes; Tres Leches French Toast with brioche, tres leches custard and dulce de leche; and the 1957 Benedict with ham and roasted pork, Swiss cheese, griddled Cuban toast, poached eggs, Dijon hollandaise and pickles.
Joining Havana 1957 at Flamingo Las Vegas, South Florida Cuban American coffee house Cortadito also opened on Dec. 28 as the perfect stop for classic cortadito, café con leche or latte, as the coffee house combines classic coffee favorites with Cuban specialties.
